Blue cheeses are considered a delicacy and continue to enthrall food connoisseurs with their partiality; blue cheeses are made in several countries primarily in Europe and the United States. Blue cheese is made by introducing mold cultures in the curds after which the cheese as it ripens develops the bluish green vein of mold characteristic of blue cheeses.

One of the most famous among them is Blue Stilton a fine cheese made only contained by the counties of Leicestershire, Derbyshire and Nottinghamshire in the UK. There are a number of other famous blue cheeses from other countries especially France that are acclaimed as culinary delight worldwide.

Some of the well known blue cheeses that could be mentioned are Roquefort (France), Gorgonzola (Italy), Bleu d'Auvergne (France), Bleu de Chevre (France), Cambazola (Germany), Saint Agur cheese (France), Saga blue (Denmark), Picon (Spain), Maytag Blue (United States) and Cashel Bleu (Ireland) among others.

Blue cheese can be used as dressing with salads or served near bread and crackers or melted on pastas and grilled dishes or served as dessert with fruits like melons, apples, figs along near port wine.      

Practically every country which produces cheese now also produces a blue cheese; the varieties are practically endless.
